The protagonists of our dishes are fish, crustaceans and vegetables chosen with a view to sustainability and respect for the sea and the land from which they come from.

Fish

Fresh fish, purchased daily, that, almost always, comes from our sea. We choose the best catch according to the origin of the fish and cooking method to advance a sustainable fishing.

Vegetables

Seasonal, cultivate in Italy and biological. We would like you to rediscover the fruit and vegetable diversity that distinguishes our country from the others and the extraordinary qualities of these ingredients.

Pasta

The fresh pasta is homemade, respecting to the Italian tradition. The durum wheat semolina pasta that we offer comes from the “Pastificio Agricolo Mancini” which produces pasta only with the wheat that grows directly in the fields that surround it in the heart of Marche region.

Wine

Drinking good wine is absolutely important. We select the best italian wines to pair with our dishes, from the well-known wine cellar to byodinamic producers and careful selection of Triple “A” producers.

Today more than ever, we work to support the small businesses that represent the diversity of our country.

We are inspired by traditional recipes, choosing natural products and working without alter the organoleptic and healthy properties, but enhancing their flavours.

Above all, it is our dehors that makes us so proud.
